More cooking and baking

Sweet Rosie's http://j.mp/cP62JL Egg, Nut, and Dairy Free Vanilla Cupcakes http://twitpic.com/5seowa

We tried these but to no avail. Many sank in the middle, and those that looked OK wouldn't be prised from their cups. The next attempt will probably involve a little more flour, if we try to make them again.
  • Rating - 15/35 ... the same as the number that turned out.

All Recipes.com http://allrecipes.com/Recipe/crazy-cake/detail.aspx Crazy Cake

Substitutions: No cocoa was harmed in the making of these cakes: We used the same measure of plain flour instead, with an extra cup thrown in after the shambles that was the cupcake failure.

When the cupcakes failed, we came back to Google and found this recipe. We actually had all the ingredients on hand, as well, except the cocoa, which was just as well because we don't want kids getting all anaphalactic on our first cooking experiment for our boy!

Tips for beginners: leave the cakes in the pan for a few minutes before you try turning them out. These two perfect specimens actually each ended up breaking in half :( Didn't affect their taste, though: apparently one of them (uniced) went down a treat at mrs_g's work!
  • Rating 8/10

Sweet Rosie's http://j.mp/r6vPQi Dairy Free Frosting for Allergy Free Cupcakes*
Self-explanatory, really. We'll be making some blue and some uncoloured icing for those with colouring issues. More when it's actually done (looks and tastes like proper frosting - will be up to do some more after lunch / the floor dries).
    • Rating 9/10

    * Used on other cakes instead

    My weekend with my boy

Jr_g is growing up too fast! Soon it will be his 1st birthday, and there's so many cute things that he does.

One day a while back we played "footy" on that bed with his "My First Footy". He absolutely loved it; so much so that, this morning, he went to the study in which a bed is covered with stuffed toys, etc, to get this footy and play with me with it!

Another game we played was telephones. He is absolutely obsessed with anything that takes us away from him: the computer and the phone especially. I have given him my old Nokia 3130 which he keeps with his blocks. I asked him, today, who was there, and he gave it to me. I spoke into it, ending the conversation with "Thank you", and gave it to him. He took it, smiling, put it to his ear, and made some speaking noises before handing it back to me. This happened a few times - we'll see if he remembers it like he remembers his footy.

This weekend we took him to mrs_g's family holiday home which goes on the market tomorrow because it's her nan's home and nan is moving into a nursing home. Jr went to the beach, came with us up the esplanade, and we took him to the beach. Although it's the depths of winter he really enjoyed it.

We're looking forward to his birthday and to more growing up moments this weekend, starting Thursday

    Cooking up a stormy-weather recipe

    http://sueradd.com/resources/recipe_lentilsoup.html - Tangy Lentil and Silverbeet Souphttp://twitpic.com/5rdld9/full

    Substitutions

    • Using spinach instead of silverbeet
    • Shredded the zucchini instead of cubing it
    • Using already-cooked lentils instead of raw ones
    • Added some chicken-styled stock powder

It's turned out alright - http://twitpic.com/5rerww. Again it's not really what we're after. It looks like muddy dishwater with bits in, and is missing a bit of flavour, which is why I added the stock powder. The six boxes we have of it contain 4 ladles, which is a "main meal size" according to the recipe, plus one because we don't have enough of the boxes.

I tried a small bowl of it, and now look forward to seeing how it turns out after being thawed tomorrow for lunch.

    My rating - 6/10
